Clean the spinach and wash it thoroughly. Peel the onion and garlic, then chop both finely.

Heat the olive oil in a large saucepan. Add the chopped onion and garlic and sauté for 5 minutes.

Pour in the vegetable stock, bring everything to a boil, then cook over medium heat for 15 minutes.

Meanwhile, fry the bacon slices in a non-stick pan until crisp. Transfer them to paper towels so the excess fat can drain.

Add the spinach to the saucepan and cook just until it wilts and becomes tender.

Season the soup with the salt, ground black pepper and lemon juice.
