Wash and dry the parsley, then chop it finely. Cut the smoked bacon into small pieces. Clean and wash the spring onion and chop it finely.

Heat the olive oil in a pan and sauté the spring onion, stirring regularly. Once softened, add the chopped parsley and bacon and cook for about 3 more minutes.

Peel the tomatoes and add them whole to the pan. Pour in half a cup of water and simmer the sauce over low heat for about 20 minutes. Stir several times and break up the tomatoes with a wooden spoon as they soften.

Add the white wine, salt and dried basil. Bring the sauce briefly to a boil, then remove it from the heat.

Meanwhile, bring a large pot of water to a boil. Add salt and the spaghetti, then cook according to the package directions, taking care not to overcook the pasta.

Rinse the cooked spaghetti with cold water and drain thoroughly.

Divide the spaghetti among plates and spoon the prepared tomato and bacon sauce over the top. Serve the grated Parmesan separately alongside.
