Wash and chop the parsley, and cut the smoked bacon into small pieces.2Melt the butter in a saucepan and sauté the onion until lightly golden. Add the parsley and bacon and continue cooking for a little over 5 minutes, then remove the pan from the heat.3Cut the bread rolls into small cubes and place them in a large bowl. Add the sautéed onion, bacon and parsley mixture.4Whisk the egg into the milk, then pour the mixture over the bread. Mix thoroughly and leave it to stand until the bread has absorbed the liquid well.5Once the mixture is fully soaked, add the flour and mix again.6With damp hands, shape the mixture into dumplings approximately the size of an apple.7Bring a large pot of salted water to a boil.
